Notes
Skuse's Complete Confectioner, originally published around 1878–1880 by E. Skuse, a professional London confectioner, became one of the most comprehensive practical guides to Victorian sweetmaking. Drawing upon his firsthand experience in the confectionery trade, Skuse developed a detailed manual covering the art of sugar boiling and the manufacture of chocolates, fondants, caramels, nougats, crystallized fruits, and numerous other confections.
Combining recipes with technical guidance on sugar boiling, flavoring, coloring, and specialized equipment, the volume was designed as a valuable reference for professional confectioners and aspiring craftsmen alike. First appearing during a period of rapid growth and industrialization in the British confectionery trade, the book reflects the increasing sophistication of commercial sweetmaking and the importance of preserving traditional techniques alongside emerging manufacturing methods. Its continued popularity through numerous revised and expanded editions demonstrates its practical value to generations of confectioners.
